


About this tea
White tea is a unique style and category of tea that undergoes the least amount of processing. It is not rolled, fired or roasted with high temperatures. Rather it is produced according to methods developed in northern Fujian during the 18th century that require careful hand-plucking, withering, curing and gentle baking. The withering process can last up to 72 hours and is the critical work of the tea master to sense the tea and its gradual reduction of moisture content before the decision is made to lightly bake and finish the batch. The minimalistic white tea process offers the taster a pristine experience of the original cultivar’s taste and aroma. This batch of white tea is very rare and made with the tea bush cultivar known as Hong Yun Taiwan Cultivar #21 (Red Rhythm #21).

The Mingjian Village is situated in the central highlands of Nantou, Taiwan and the gardens here are incredible. Jui Lung focuses on the importance of allowing nature to nurture the grounds. This can be seen in one of the small Wu-Yi gardens—Hong Yu 18 trees on the border, culinary herbs between the tea bush rows and plenty of nitrogen fixing “weeds” to maintain healthy and living soils.
