About this tea
We have a special tasting flight from the Nishi family’s organic tea gardens that are exclusively hand-picked for us. Renowned throughout Japan as pioneers of Japanese organic tea cultivation, the Nishi family has been one of our strongest partners for organic sencha since 2006. Every year, the Nishi family produces a special batch of hand-picked shincha honoring the first growth, new tea of spring.
Less than 1% of all Japanese tea is harvested by hand, so we are always thankful and eager to share such special tea. The famed saemidori is bright and fresh. Saemidori translates to “clear green” and is the hybrid of the asatsuyu and yabukita cultivars. It is one of the first harvested cultivars each spring and is favored by tea farmers in Kyushu Island for its vivid green color and its relative frost resistance in the early spring. This lot of saemidori was divided into two batches for an educational tasting. One portion of the lot was light-steamed (asamushi) and the other was mid-steamed (chumushi) so we can enjoy the differences and nuances of the steaming process. This is the perfect tasting flight to experience the same harvest batch of shincha produced in two different ways.

Renowned throughout Japan as pioneers of organic green tea cultivation, the Nishi family has been our strongest partner for organic sencha and organic matcha since 2006. Every year, the Nishi family produces exclusive allocations of organic sencha and organic matcha for us. This Nishi family grows more than a dozen different green tea cultivars all with unique characteristics and nuances that make our blends really stand out. Our long standing relationship with the Nishi family allows us to select the very best micro-lots and fine tune our sencha and matcha blends each year. The Nishi Organic Tea Farm consists of many different gardens secluded in pine and cedar forests of Kirishima Mountain, an active volcano on Kyushu, Island. The densely forested area where these amazing tea farms are located provides a natural buffer zone that protects the tea gardens from industrial pollution.
