About this tea
This shincha is a light steamed sencha from the Toyosawa area, Fukuroi, Shizuoka. This region sits at the foot of Mount Ogasa and is one of the primary growing regions of Shizuoka. The tea farms of this area have well-draining soil and large temperature differences between day and night that produce the distinctive flavors and aromatic complexity of the teas. The undulating terrain at the base of the mountain creates the rich flavor and aroma. This tea really stood out on the tasting table with its evergreen and fresh pine notes. It is like deep forest dew drops.

Traditional Tea Preparation
Add 6g tea to a small (150ml/5oz) kyusu teapot.
Use water cooled to 170°F.
Infuse for 45 seconds and decant.
Repeat for another 1-2 infusions for 15 seconds.
