"Eastern Beauty” (Dong Fang Mei Ren) is a unique style of oolong tea that combines oolong and red tea processing methods. It is very similar to the top quality of Darjeeling Muscatel but with its own, one-of-a-kind floral and fruity character. To make traditional Eastern Beauty oolong we need the help of “the tea jassid.” When this insect bites the tea leaf it begins to wilt and oxidize on the bush. Certain enzymes and aromatic compounds which are the plant’s natural defenses triggered. This begins the unique withering and oxidation process that authentic Eastern Beauty needs to attain its uniquely fermented characteristic.
Our partners in Doi Mae Salong produced this distinctive spring micro-lot using the Ruan Zhi cultivar for its high polyphenol profile and aromatic compounds which have a propensity to transform into amazingly colorful, tasty and stylishly fragrant tea. To create the Dong Fang Hong, the tea leaves are tumbled in the yaoqing bamboo drum and left to wither and oxidize overnight on trays until the leaves give off a special aroma and become multi-colored. Each infusion possesses a vibrant taste and enlivening Qi (energy).
Use 195°F water.
Don’t rinse this tea.
Infuse 1st brew for 45 seconds - 1 minute.
Infuse 2nd brew for 30 seconds.
Repeat several times at 30 - 45 seconds, brewing until the flavor and aroma of the tea dissipates. As the tea leaves expand and unfurl, the brewing time may increase to coax out more aroma and flavor.

Add 5g to a Gaiwan or Gongfu teapot (per 150ml).Use 195°F water.

, this is one of my favourites. You have a fruity sweetness (not overpowering, but nevertheless present), you have shades of something like earl grey (i.e. the reminder that this is something approaching a black tea), and you have the fresh kick of a younger green tea. I was surprised about the timings advised to brew this one, but actually they worked out well. This is a complex tea. I couldn't quite place it among the other Oolongs that I know. It's more complex than just the Oolong label would suggest. I do know, though, that I'll be drinking this one for a while to come.
