Ingredients
- 3 mashed ripe bananas
- ¼ cup of granulated sugar (optional for a sweeter muffin)
- ⅓ cup of canola or vegetable oil, plus more for greasing
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- ½ teaspoon of salt
- 1 ½ cups all-purpose flour
- ⅔ to 1 cup of cranberry sauce
- 1 tablespoon of Rishi cinnamon plum tea
Preparation
- Preheat the oven to 375 degrees, and lightly grease a muffin tin.
- Place the mashed bananas in a large bowl.
- Add the sugar, oil, baking powder, baking soda, salt, and flour, cranberry sauce, and Rishi tea and gently mix together until well combined.
- Spoon the batter into the muffin tin, filling each cup to the top.
- Bake for 25 minutes or until the muffins are golden brown.
