Unique Varieties of Matcha Green Tea

With its high caffeine content, artful preparation and delicate flavor and aroma, matcha has quickly become a favorite of tea-drinkers around the world, finding itself a staple in many specialty cafes in North America. Enjoyed in many different preparations, from traditional hand-whisked to specialty matcha lattes, there is a whole world of Japanese matcha flavor profiles to explore, and if you’re just beginning, don’t forget your matcha tea set!

How to Prepare Matcha 

Due to its uniquely powdered form, matcha requires a particular preparation process to enjoy properly. We suggest adding 2.5 ounces of under-boiling water (160ºF) to 1 teaspoon (~2 grams) of sifted matcha powder, whisking the mixture for 15 to 20 seconds. The whisking should alternate between a circular and side-to-side motion, after which the mixture should become pale green, frothy and light. To this mixture, you can add hot water for a traditional Japanese tea, or add steamed milk and sweeteners for a more modern latte.

Yes, but the growing process is slightly different. While most green tea is cultivated under the sun, typical tea leaves for matcha are grown in the shade for three weeks before harvesting, resulting in a vibrant green, slightly less oxidized tea. Additionally, the powdered nature of matcha requires that drinkers consume the entirety of the tea leaf, rather than just the steeped tea extraction.

Matcha contains a considerable amount of caffeine, similar to that of a cup of coffee. This is because drinkers are consuming the entire leaf in the powder which means more caffeine is concentrated into the beverage when prepared.

Sifting and whisking matcha powder increases the quality and flavor of the tea. Failing to do so can lead to a poorly distributed, weak and muddled drink. The cup may also end up with a gritty and astringent mouthfeel, due to the dry clumps and improper extraction.

Cold or iced matchas are a popular beverage in many parts of the world, however the initial matcha mixture must still be prepared with warm water. To try a cold matcha, consider adding cold water, cold milk, or even lemonade and pouring over ice!
