About This Tea
The Organic Arita Farm where we sourced this shincha lot from is situated in southern Japan's Kyushu Island, south of Kagoshima and Mount Kirishima where many of our organic teas are farmed. The Arita Farm specializes in organic tea cultivation and takes great pride in their soil management and composting system that raises impeccable and rich green teas. The volcanic soil delivers both a thick taste sensation and vivid green color. This micro-lot is the first picked shincha from their saemidori cultivar garden and is mid-steamed (chumushi) and lightly roasted to enhance the thick and smooth taste sensations and to accentuate the original cultivar character of saemidori.

Kagoshima, Japan
Kagoshima Prefecture is located at the southwest tip of Kyushu (the third largest island of Japan) and is largely mountainous and home to important lumber, fishing and agriculture industries. Much like the rest of Japan, this region has well manicured tea gardens with well-developed irrigation, and farmers follow strict growing procedures to produce this perfect tea bush shape and size.

Traditional Tea Preparation
Add 6g tea to a small (150ml/5oz) kyusu teapot.
Use water cooled to 170°F.
Infuse for 45 seconds and decant.
Repeat for another 1-2 infusions for 15 seconds.
