Coconut Turmeric Chia Parfait

Try this light and refreshing coconut turmeric chia parfait as a snack or dessert for a tropical treat.

Ingredients

  • 1/3 cup + 2 Tbsp chia seeds
  • 3 cups unsweetened coconut milk (SO Delicious)
  • 1.5 oz cream of coconut (Coco Reàl)
  • 1 tsp vanilla extract
  • 7 oz Rishi Turmeric Ginger Chai Concentrate
  • 3/4 cup fresh mango, diced
  • 3/4 cup fresh pineapple, diced
  • 2 oz fresh mint leaves, chiffonade

Preparation

  1. In a 32-ounce resealable jar, combine 1/3 cup chia seeds, cream of coconut, coconut milk and vanilla extract. Shake vigorously to combine; refrigerate overnight to bloom.
  2. In an 8-ounce resealable jar, combine 2 tablespoons chia seeds and Turmeric Ginger Chai Concentrate. Shake vigorously to combine; refrigerate overnight to bloom.
  3. To assemble: spoon approximately 2 tablespoons coconut chia pudding in a 5 to 6-ounce serving glass. Top with 2 tablespoons turmeric chia pudding then a layer of fresh mango, pineapple and mint. Top with 2 to 3 tablespoons coconut chia pudding.
  4. Optional garnishes: toasted coconut chips, fresh fruit, mint.
