About This Tea

Japan is renowned for its agriculture and development of special tea bush cultivars. The Shizu 7132 cultivar of tea bush was developed in the late 1960s. It is prized for its distinctive cherry blossom aroma and its dynamic flavor profile. Recently, Japanese food scientists identified that the aromatic compounds in Shizu 7132 cultivar and their unique spicy and fruity fragrances that are associated with this breed of tea bush are enhanced with cold storage aging. The 7132 cultivar is one of our favorite Kuradashi teas because its somewhat fruity almond and sakura cherry blossom aroma pairs so well with the mellow sweetness aged tea. The vintage blends we can make with 7132 are sweet and delicious like a mochi dessert.

Mr. Sugiyama San grows our organic Shizu 7132 Sakura Sencha at his farm in the Shimizu region of Shizuoka. His vintages of organic teas are held in cold storage for proper aging and development of their exquisite fruity and floral character. He is one of the few farmers in Shizuoka who cultivates the 7132 cultivar according to certified organic practices. Sugiyama San is a 4th generation tea farmer dedicated to the hard work of organic farming. He enriches his soil with organic composting practices and applies special efforts toward making organic premium teas of stellar taste and quality.

Preparation

Traditional Tea Preparation

Add 6g to a small (150ml/5oz) kyusu teapot or hohin.
Use boiled water cooled to 170°F.
Infuse for 30-45 seconds and decant.

Repeat for another 1-2 infusions using short steeps of 15 seconds per round until the flavor and aroma dissipates.

This tea infuses fast and has strong character that is best expressed over the course of 3-4 brief infusions.
