Taiwan is a celebrated origin of highly-specialized teas. Tea gardens above 1,000 masl are designated as Gao Shan Cha, directly translating as “High Mountain Tea.” Tea from these elevations are extremely precious, and the best lots are produced in the winter and spring harvests.
The flavor and aroma of the seasonal harvests differ greatly from spring to winter. The flavors in the early year crop are densely packed due to the influx of nutrients from the tea bushes coming out of their winter hibernation. The spring teas have overall strength, richness and balance. The winter harvest in the later year crop have very strong and anomalous aromatics and light tannin with high sweetness, due to shorter days with less sunlight and lower temperatures during the wintering and processing duration. This year’s winter harvest reveals a really fantastic and fruity taste with aromas of purple passion fruit, ripe mango and light lily fragrance. Traditional Preparation
Add 6g tea leaves to a Gaiwan or Gongfu Teapot (per 150ml)
Use water cooled to 195°F Add water to fill gaiwan, Infuse for 1 minute to 1.5 minutes 2nd infusion: 30-45 seconds 3rd infusion: 1 minute 4+: add 15 seconds per infusion, building up to 3-4 minute steeps
