Ruby Oolong is a special type of oolong tea produced in the Doi Mae Salong mountainous region in northern Thailand and is a full-bodied oolong tea, deeply oxidized and slowly baked to bring out complex layers of tasting notes. Thailand has beautiful soil, which is rich and loamy, providing ample nutrients unique to this region. One can truly experience the distinctive terroir of the picturesque Doi Mae Salong region of northern Thailand through tea. This is a truly spectacular micro-lot of Ruby Oolong, with a silken mouthfeel and notes of dark cherry, aged balsamic, ruby port, and dark chocolate.

Traditional Preparation
Add 6g tea leaves to a Gaiwan or Gongfu Teapot (per 150ml) Use 200°F water Infuse for 1 minute and decant | 2nd infusion: 30 seconds | 3rd infusion: 1 minute | 4+: 2 minutes

That Second Infusion
The Ruby Oolong is one of my favorites so I jumped at the chance to snag some of this. Not disappointed!... All of the best characteristics of the Ruby Oolong but more pronounced and developed. The chocolate and port notes are really expressed in the second Infusion.
