Ruby Oolong is a special type of oolong tea produced in the
Doi Mae Salong mountainous region in northern Thailand.
This full-bodied oolong tea is
deeply oxidized and slowly baked to bring out complex layers of flavor with a sublime, elegant tannin structure. The soil in northern Thailand is soft and loamy, providing a concentration of nutrients not found in other oolong tea origins.
The terroir and the cultivar Jin Xuan (“Golden Lily”) lend a
unique fruity sweetness and rich viscosity in mouthfeel. This micro-lot has notes of
dark chocolate, cherries and aged ruby port with classic oolong character. If you like our
Ruby Oolong from Thailand, this tea is a treat with a bit more
red fruit and sweetness and is great for cold brew and traditional gongfucha.
Add 9g to a Gaiwan or Gongfu teapot (per 150ml).
Use 212°F water.
Briefly rinse the tea and discard rinse. Infuse the 1
st brew for 45 seconds.
Infuse 2
nd and 3
rd brew for 30 seconds.
Repeat several times at 30 - 45 seconds, brewing until the flavor and aroma of the tea dissipates. As the tea leaves expand and unfurl, the brewing time may increase to coax out more aroma and flavor. This tea can be brewed several times in one session.
