Amari (singular Amaro) is a category of bitter herbal liqueurs from Italy that have hundreds if not thousands of years of botanical wisdom and food cultural relevance. . Delicious. However, I've been enjoying it primarily as a cocktail ingredient! I made a batch of the saffron amaro (per Rishi's instructions for homemade bitters) and have been experimenting with various concoctions in my home bar. Since no one has yet commented on this alternative use for the outstanding bitter blend, I thought I'd share a couple of recipes that I've particularly enjoyed:Saffron Amaro Cocktail #1 -- 1.5 oz rye, .75 oz lemon juice, .5 oz honey syrup, .5 oz Rishi saffron amaro; shake with ice, strain, and top with 3-4 oz ginger beer (or maple soda for a unique taste!)Saffron Amaro Cocktail #2 -- 1.5 oz dark rum, .5 oz lime juice, .5 oz Rishi saffron amaro, .5 oz pineapple shrub, .5 oz homemade falernum syrup (simple syrup infused with clove, ginger, lime zest, almond); shake with ice and strain
