Gyokuro, literally “jade dew,” is the most prestigious and rare shade-grown green tea from Japan This year we selected gyokuro from three producers in the Okabe region: Tohei San, Maejima San and Omura San Each teamaker offers an expression of the classic Okabe style, which emphasizes a unique mountain freshness balanced with umami depth. Omura San, a living legend and national treasure of the Japanese tea industry, has been making gyokuro for nearly 70 years. He represents a very high level of artisan tea-making experience and skills. He employs the classic style of straw-thatch-and-frame tana coverings to shade his gyokuro, and his tea has a rarefied depth and energy. This year, Omura San’s Gyokuro is full flavored and complex with mountain salinity, minerality, richness of umami and a reverberating sweet and savory aftertaste. This tea offers lots of tasting notes and energy for gyokuro lovers that transcends the usual profile of gyokuro. Omura San makes a few qualities and grades of gyokuro each year and we selected his top quality or top grade from 2021.

Tasting Notes

Traditional Preparation
Add 1 tbsp (7g) tea to a small (150ml/5oz) Kyusu teapot or Hohin.
Use water cooled to 170°F.
Add water to just cover the tea leaves. Infuse for 60 seconds and decant.
Repeat for another 4+ infusions, adding 5 seconds to each.

An Incredible Gyokuro
This tea is without a doubt the best gyokuro I've ever had the pleasure of drinking, and it subsists

beautifully for 6+ infusions. I was skeptical of the short infusion time, but it's perfect, and I highly recommend following the instructions to a Tea. (Sorry, couldn't help myself.) Since I didn't have the traditional cups to brew this in, I used a Rishi tea filter bag, and infused in a measuring cup (really) so that A) I could ensure precise oz measurements and B) to give me plenty of space to breathe in the aroma (trust me, you do NOT want to miss the nose on this). The infusions span a gorgeously saline first brew, then head into fresh apricot territory, which blossoms into candied apricots on the third and fourth infusion, with the salinity returning in a really balanced way in infusions 4+.

A Stunningly Complex Treat

tea (ahem... tee. Sorry, couldn't resist) is more than worth it. I was skeptical of the 20 second initial decant time, but I followed it (and then raised brew time 5-10 seconds with each following infusion), and it was perfect. But don't worry, you don't actually need the specific pots Rishi mentions. Just something that can hold precise measurements of water. I personally recommend a pot or glass with a lot of empty space at the top, because you'll miss out on the incredible, changing nose of this brew if you don't. (I poured 5 oz of tea into a 16oz glass to drink.) I also highly recommend something see-through, because the pale sage color of this gyokuro is a delight. Amazingly, the pale color holds an incredibly deep flavor of liquor. The first brew is highly saline, with the second an excellent balance of fresh apricot and kombu. The third brew transitions heavily into the candied apricot, with saline arriving back with the fourth to tangle with the high candy notes. (I haven't gotten to the fifth infusion yet, so that one's a mystery.) I cannot recommend this tea enough. Drinking it is an experience I'll treasure for a long time.
