Origin: Mingjian Village, Nantou County, Taiwan Cultivar: TTES Hong Yu“Ruby” 18 Elevation: 500m Harvest: May 2022 Barrel Aging Release: November 2022
This tea is the result of collaboration between our teams in Japan and Taiwan. The combination of Japanese whisky barrel aging and this amazing style of aromatic, spicy and fruity black tea from Taiwan results in unique and brilliant flavors.
We ship freshly produced, peak season black tea from Taiwan to Japan for barrel aging. After several months of storing and curing in Japanese whisky barrels, we import to the USA and release it before the autumn and winter tea season.
Traditional Tea Preparation
Add 5g to a Gaiwan or Gongfu Teapot (per 150ml-200ml). Use 200°F water. Don’t rinse this tea. Infuse the first brew for 1 minute. Infuse 2nd and subsequent brews for 30 seconds.
Repeat several times until the flavor and aroma of the tea dissipates. As the brewing session ensues, increase infusion time to coax out the body and strength of the final infusions.

Intense and aromatic (and worth it)
My first experience with a barrel-aged tea. The dry tea leaves have a unique, strong, sweet aroma of... tobacco, peat moss, and dates. The liquor has a deep reddish-brown color. The taste has a rich smoked kelp hint to it with some slight astringency. A second steeping yields just as satisfying cup. I'm sure a third steep would have been successful, but I'm somewhat sensitive to caffeine and I was happy with where I was at. Fantastic and worth the price tag, I will be getting more.
