Meticulous soil management and more than two weeks of shading the tea garden before harvesting results in our favorite Kabusecha of the season from the Honyama region of Shizuoka.
This tea is rich and smooth with low-tannin and a deep, blue-green jade leaf. The opaque, emerald juicy infusion color is the result of the fukamushi deep steaming process.
Amazing Kabusecha like this one has an unmistakable, sought-after and hard to define sweet and stimulating profile that is called out by tea tasters as “kabuse kaori” (wrap-shading aroma). The blue-green infusion and leaves give off a pleasant “brothy” fragrance followed up by a concentration of umami and sweetness that buzzes and vibrates the senses.
This tea makes amazing cold brew tea by adding 12 grams to a liter of cold water, steeped in the fridge overnight.
